On today’s episode, Dr. Nick talks about how soybean oil in salad dressings can affect the brain. Most salad dressings contain vegetable oils (corn, soybean, safflower, sunflower, grapeseed, etc); however, the majority contain soybean oil as it is by far the most consumed oil in the USA. All vegetable oils contain very high amounts of the pro-inflammatory omega-6 fatty acid called linoleic acid that becomes rancid and oxidized during the high heat ultra processing. At the same time, soybean oil is inherently detrimental to the brain as seen in study described in the video. Soybean oil affects the genetic expression of multiple proteins in the hypothalamus that affect neurochemical, neuroendocrine, metabolic, and inflammatory processes. One specific hormone is Oxytocin, which is considered the love hormone as it is released when we give hugs.
